Four Stages Of Custom Flavour Development

Flavour Brief
The more concrete, the faster development moves. Most useful inputs: a reference product (even a competitor's), a description of intended intensity, target market, and any ingredients that must be included or excluded (allergens, dietary requirements, clean-label constraints).

Base Grade And Roast Selection
Different seasonings suit different roast levels. A delicate flavour is overwhelmed by a dark roast; a robust chili profile needs enough roast development to stand against it. This is decided alongside the flavour, not after.

Sample Rounds And Calibration
First sample establishes the direction. Feedback against specific attributes โ too salty, not enough heat, seasoning not adhering evenly โ drives round two. Most profiles land within 2 rounds; genuinely novel ones may need 3.

Locked Specification And Scale-Up
Once approved, the seasoning dosage, application method, roast curve, and base grade are locked as the production specification. Critically, a lab or small-batch sample must be validated at production scale โ seasoning behaviour can shift when moving from sample to full run.
The stage most often skipped: validating the approved sample at production scale before the full run. Seasoning adhesion and distribution behave differently in a small batch than in a production line. A short pre-production validation run prevents an expensive surprise.
What To Factor In Before Committing To A Custom Flavour
Allergen implications: Dairy-based (cheese), soy, or gluten-containing seasonings introduce allergen declarations and may require dedicated line handling. Confirm this early, not at label stage
Certification compatibility: Every seasoning ingredient must be compatible with your required certifications โ Halal, Kosher, Organic. A seasoning that breaks Halal compliance is discovered too late at production
Shelf life effects: Some seasonings affect oxidation behaviour and shelf life. Confirm shelf life for your specific flavoured SKU rather than assuming it matches plain roasted
Minimum order quantity: Custom seasoning often carries its own MOQ from the seasoning supplier, which can set a floor on your production run size. Ask about this at brief stage
Regional taste calibration: A profile developed for one market frequently needs adjustment for another. If launching across multiple regions, plan for market-specific variants rather than one universal recipe
