How Vietnamese Dried Fruit Is Actually Produced

The processing method determines texture, shelf life and cost — and it is worth understanding before specifying a product, because the three main methods are not interchangeable.

Osmotic dehydration (soft-dried)
Fruit is partially dried in a sugar syrup solution before final drying, drawing out moisture while retaining a soft, chewy texture
Common for mango and some banana products; final moisture typically 15–20%, requiring careful packaging to control shelf life
Vacuum frying
Fruit is fried at low pressure and lower temperature than conventional frying, preserving colour and nutrients better while achieving a crisp texture
Common for jackfruit and banana chips; final moisture is very low, giving strong shelf stability but a different eating experience from soft-dried formats
Hot-air drying
Conventional dehydration without oil or syrup. Lower cost, longer processing time, and a firmer, more traditional dried-fruit texture
Used where a "natural, no added sugar" claim is the priority over a specific mouthfeel
